This heavy-duty machine mimics human hands to create beautiful, authentic dumplings, but it requires the dough to be prepared in a specific format before feeding.

  • The Dimension Standard: Do not throw raw, unkneaded dough directly into the hopper. The machine requires pre-sheeted dough wrappers that are 20 cm wide and 1 cm thick. This pressing/sheeting process is crucial—it develops the gluten net, giving your dumplings a chewier, more elastic, and premium handmade mouthfeel.

  • The Hydration Formula: We highly recommend a flour-to-water ratio of 500g flour to approx. 215g water (around 43% hydration). Too much or too little water disrupts the sealing process, leading to split edges, missing borders, or dumplings bursting during cooking.

  • Pro-Tip from the Factory: Always ensure the dry flour hopper at the back of the machine is fully loaded. Without a steady dusting of dry flour, the wrappers will stick, and the dumplings will easily burst during the forming process.
